The National Dairy Foods Research Center Program
To help industry innovate to address unmet consumer demand for dairy and dairy-based products, Dairy Management Inc.™ (DMI) supports the National Dairy Foods Research Center Program. The program is a unified coordinated national research effort conducted through six research centers, three applications labs and other universities.
Research Centers
The short- and long-term research projects conducted at the National Dairy Foods Research Centers are funded by DMI to meet the needs of business today and in the future. Seeking to maximize industry's R&D resources, DMI works in partnership with individual dairy processors and food and beverage manufacturers to support research on specific topics to spur product innovation.
Each center includes research facilities and a dairy pilot plant. Research projects also are conducted at other colleges and universities across the country.
The California Dairy Research Foundation
- Dairy Products Technology Center – California Polytechnic State University (San Luis Obispo)
- University of California-Davis
Areas of focus: Conducts research activities on behalf of the dairy industry in product and ingredient technology development, nutrition and health and dairy confidence.
Midwest Dairy Foods Research Center
- University of Minnesota-St. Paul
- South Dakota State University (Brookings)
- Iowa State University (Ames)
Areas of focus: Concentrates on natural and processed cheese functionality and flavor, fractionation of milk and whey protein and their use as ingredients, shelf life and flavor of milk, and genomics of probiotic bacteria.
Northeast Dairy Foods Research Center
- Cornell University (Ithaca, N.Y.)
- University of Vermont (Burlington)
Areas of focus: Works on developing and improving processing technologies to enhance dairy product quality, safety and functionality, improving the safety of dairy foods and processing systems, and modifying dairy product composition to ensure that dairy foods and ingredients remain a part of a healthy diet.
Southeast Dairy Foods Research Center
- North Carolina State University (Raleigh)
- Mississippi State University (Starkville)
Areas of focus: Specializes in milk and whey ingredient functionality, thermal and biological processing, sensory properties of cheese and dairy ingredients, dairy food safety and microbial technologies for starter cultures and probiotics.
Western Dairy Center
- Utah State University (Logan)
- Oregon State University (Corvallis)
- Weber State University (Ogden, Utah)
Areas of focus: Concentrates on microbiology of starter and nonstarter lactic acid bacteria, cheese technology, whey utilization, and milk processing.
Wisconsin Center for Dairy Research
- University of Wisconsin-Madison
Areas of focus: Explores the functional, flavor and physical properties of cheese/cheese products and whey/whey components/milk components used as ingredients and as finished products. Researches cheese make and whey processing/separation procedures, use of milkfat, and technologies for food safety and quality.
Applications Labs The dairy applications labs supported by DMI assist DMI processor and manufacturer partners in:
- Prototype/concept development
- Product and process troubleshooting
- Production scale-up assistance
- Sensory evaluation
Dairy Products Technology Center

Areas of focus: Specializes in dairy powders, concentrates and ingredients; product technology development, ingredient technology.
Sensory Service Center
- North Carolina State University (Raleigh)
Areas of focus: Specializes in dairy sensory analysis, including consumer testing, preference mapping and instrument flavor analysis techniques.
Wisconsin Center for Dairy Research
- University of Wisconsin-Madison
Areas of focus: Specializes in functionality, performance and utilization of cheese, whey and milkfat.
