I want to use NDM in a bakery formula that calls for one gallon of skim milk. How much do I use?
Use the following substitution:
For: Skim milk, 8.6 lbs. (about 1 gallon)
Use: Nonfat dry milk, 0.8 lbs. (about 13 oz.), and water, 7.8 lbs. (about 3.75 quarts)
For ease of handling, blend the dry milk with the other dry ingredients such as sugar and salt before addition.
