Procedure
Procedure for Dry Mix:
1.
Mix together all ingredients thoroughly.
2.
Place 50g of dry mixture per package.
Procedure for Salad Dressing:
1.
Mix 50g dry mix salad dressing with 1/2 cup water using a whisk or electric mixer, or shake in a bottle.
2.
Add 1/2 cup skim milk and mix vigorously.
3.
Store in refrigerator for at least 1 hour before serving.

Unfolds to stabilize the globules after adsorption at the oil/water interface.
Provides emulsion stability by reducing fat globule mobility and minimizing coalescence.
Adds a uniform texture and mouthfeel.
