Procedure
1.
Weigh out 34% whey protein concentrate, nonfat dry milk and lactose. Add these dry components to a quantity of water that will produce a concentrated liquid that is flowable.
2.
Heat the solution to approximately 140°C (284°F) and mix in the lecithin, fat blend and vitamins/minerals premix.
3.
Continue heating to pasteurize. Homogenize using a two-stage process with pressures of 141 kgf/cm (1600 lb/in.
2
) in the first stage, and 35 kgf/cm (500 lb/in.
2
) in the second.
4.
Spray-dry and agglomerate for easier reconstitution.
5.
To rehydrate, blend 10% dry formula and 90% potable water by weight. Heat to pasteurize and cool to feeding temperature
Benefits of Using Dairy Ingredients
Lactose
Provides energy before proteins and fats can provide energy.
Generates a gradual and prolonged energy supply at a constant blood-glucose level between feedings.
Simulates the lactose level of human milk in the infant formula—human milk contains 7% lactose and milk-based formulas contain only 4.6% lactose.
Inhibits the growth of pathogenic organisms in intestine.
Whey Protein Concentrate
Maintains solubility during processing.
Minimizes sediments.
Imparts smooth mouthfeel.
Contributes to the beverage’s overall nutritional profile.
Aids in emulsification.
Adds stability.
Nonfat Dry Milk
Contributes basic nutritional profile of milk.
Provides natural flavor compatible with infants’ needs.
