What is titratable acidity?

Titratable acidity measures the amount of alkali required to neutralize the components of a given quantity of milk and milk products, and is expressed as percentage of lactic acid. This test is used to determine milk quality and to monitor the progress of fermentation in cheese and fermented milks.
