Nutrition Facts
Procedure
1. Weigh out the food color powders and mix with the appropriate amount of base milk to make a 0.5% solution of FD&C Red #3 and a 1.0% solution of FD&C Yellow #5. This is done by mixing the milk and coloring in a glass beaker with a magnetic stir bar on a stir plate for 5 minutes on medium-high speed. Before measuring out the coloring solution to add to the milk batch, make sure that the solution has been thoroughly mixed, as some settling may occur (especially with the FD&C Red #3).
2. Weigh out the dry ingredients (fructose, sucrose, salt and carrageenan) and blend together well. Set aside.
3. Weigh out the flavorings.
4. Add the color solutions and flavorings to the base milk before adding the dry ingredient blend. Rinse the coloring and flavor containers several times with the milk to capture any residual solution from the insides of the containers.
5. Slowly add the dry ingredient blend to the milk with low-medium agitation. Mix for 5-10 minutes before pasteurization.
6. Pasteurize the milk and package it immediately under a sterile fill hood in plastic milk jugs or containers. Transfer to refrigerated storage at once.
  Note: Due to a slight degradation in red color intensity when exposed to light, as well as light-induced off-flavors, the strawberry-flavored milks should be stored in the dark.
